1 cucumber sliced into 1.5” rounds, centres partially scooped out 1 red pepper, finely diced .5 red onion, finely diced 1 tomato, seeded and finely diced 3 tbsp. olives finely diced 1 small piece feta, small cubes Ingredients - Sauce .5 cup sour cream juice half lemon .5 tsp chopped garlic salt and pepper to taste

Layer each vegetable in the cucumber cup, top with the feta and drizzle of the sauce. Enjoy !
