Carolans Coffee Cake




Traditional coffee cake with cinnamon glaze and a hint of honey flavoured Carolans Irish Cream

Yield: 1 cake (12 servings)

Streusel
1 cup brown sugar
1/2 cup flour
2 tsp cinnamon
1/3 cup butter

Cake
1/2 cup butter
1 cup sugar
3 eggs
1 tsp. vanilla
5 tsp. Carolans Irish Cream
2.5 cups flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 cup sour cream
2 cups cranberries

Cinnamon Glaze
1 cup icing sugar
3 tbsp Carolans Irish Cream
1 tsp cinnamon




Combine all the above ingredients for the glaze in a small bowl. Set aside.

To make the streusel, mix together brown sugar, flour, cinnamon and butter, blending until crumbly. Set aside.

To make the cake, cream butter with sugar in a large bowl until light and fluffy. Beat in eggs, one at a time and stir in vanilla and Carolans.

In another bowl, mix flour, baking powder, baking soda and salt.  Add to creamed mixture alternately with sour cream.  Pour into greased tube pan. Cover with 1/2 streusel, place cranberries on top and then pour the rest of the streusel over the cranberries.

Bake in a preheated 350F (180C) for 55 minutes. Cool. Remove from tube pan.

Ice the cake with the glaze by dripping it back and forth over the top of the cake.
