(multiply by the number of guests for qty)
4 3oz Caribou chops (per person)
1 tsp kosher salt
1 tsp juniper berry
1 tbsp balsamic vinegar
1 tsp cracked black pepper
2 tbsp olive oil
1 tsp fresh thyme
Marinate chops in listed spices, coating on all sides.
Leave to cool to room temperature before grilling.
Grill until 125f in the centre for medium-rare.
