4  3oz Caribou chops (per person)
1 tsp kosher salt
1 tsp juniper berry
1 tbsp balsamic vinegar
1 tsp cracked black pepper
2 tbsp olive oil
1 tsp fresh thyme



  1. Marinate chops in listed spices, coating on all sides.
  2. Leave to cool to room temperature before grilling.
  3. Grill until 125f in the centre for medium-rare.
