Mini 'French Onion Soup'
Mini 'French onion soup' with caramalized onion, gruyère pissaladière and rich beef jus dipping sauce.

Yield: 6 mini soups
6oz rich beef broth
4 x 6 puff pastry sheet, pierced with a fork, to prevent rising
2 cups caramelized onions
4 oz shredded French Gruyere
1. Caramelize finely sliced onions until a deep golden brown.
2. Let cool
3. Spread a thin layer on top of puff pastry.
4. Bake until pastry is golden brown.
5. Set aside.
6. Cut pastry with onions into 2 x 1 strips.
Serve small bowl with hot beef broth, place cheese pastry top on top.
Dip into broth and serve garnished with cheese stick.
