Grilled Sea Scallop Skewers




Grilled Sea Scallop Skewers with red and yellow grape tomatoes and warm balsamic glaze.

Yield: 8 servings

Balsamic Glaze:
1 cup balsamic vinegar
1/2 cup brown sugar

Skewers:
16 pc, 10/20 size sea scallops
8 red grape tomatoes
8 yellow grape tomatoes
2 tbsp olive oil
salt and pepper
1 bunch chopped tarragon



Balsamic Glaze:
1. Boil together balsamic and brown sugar.
2. Check consistency, let cool and drizzle on plate.
3. Should bed consistency of maple syrup.

Skewers:
1. Marinate scallops, tarragon, olive oil and tomatoes.
2. Skewer on wooden skewers, grill to order approx. 2 minutes on each side.





Place skewers on plate and add warm balsamic glaze drizzle.
